Caster Biscuits, batters, confectionery, cereals Fine particles with a tight distribution - typically 150-450µm.
Rapid dissolving in hot and cold systems.
Extra Fine Vending - Hot and cold instant drinks
Extrusion - Breakfast Cereals Dry mixes - In-store bakery pre-mixes
Fine crystals with a range of particle sizes - typically 200-600µm. Rapid dissolving in hot and cold systems.
Medium Sanding confectionery - Pastilles and jellies

Tight distribution.
Bold grain coarser than granulated.

Caster Sugar
Caster Sugar is the finest of our screened sugars with a tight particle size distribution. It is the perfect solution in bakery, controlling the spread of biscuits, rapidly aerating cake batters and ensuring effective extrusion of cereal products. The fine particle size also has applications in confectionery, giving an opaque and smooth finish to sanded jellies and a soft bite to panned sweets.

Extra Fine Sugar
Extra Fine has a fine particle size which makes it excellent for dissolving in hot and cold systems. For this reason it is the preferred choice for hot and cold instant and vended drinks. Extruded breakfast cereals and dry mixes such as bakery pre-mixes also benefit from this particle size and range.

Medium Sugar
Medium Sugar is an extremely versatile bold screened sugar. It can provide crunch, visual definition and mouth-feel when used as surface decoration for biscuits; and high shine and surface texture on pastilles and jellies. Medium sugar can also be used as an ingredient to control the spread and surface texture of biscuits.

Coarse Sugar
Coarse Sugar is the boldest of our screened sugars providing excellent visual impact, high shine and crunch when used as a surface decoration on patisserie products, cream horns and turnovers, cookies, cakes and sweet breads. The boldness of the crystal also provides an ideal centre for panned sugar confectionery.
