What is Celebration Icing Sugar?

Celebration Icing sugar is a finely milled, dry powdered fondant. It has a tightly controlled partical size (average 11 microns), less than half that of other milled sugars.

Celebration Icings are easy to use and bring process and quality improvements to the final consumer product.

Celebration Benefits

Manufacturing efficiency

  • Mix with water, juice or spirits to use
  • Reduction in processing time
  • Energy efficient - fondant can be created at significantly lower temperatures - and cost
  • Precise control of moisture content and viscosity
  • Ideal for ‘just-in-time’ production, use direct from delivery, as no tempering is required
  • Easy mixing enables uniform dispersal of flavour and colour

Versatility
Celebration icings have a variety of uses:

  • Ultrasmooth fudge and fudge-style toppings
  • Glossy fondant icing
  • Glazes
  • Buttercream fillings and crémes
  • Freeze-thaw and wrapped icings

Improved quality

  • Smoother, whiter fondants
  • Consistent quality of finished products
  • Clean label icings, fondants and fudges
  • Unlike traditional fondant, Celebration Icing sugars will not harden in winter or melt in summer.
  • Lower manufacturing temperatures mean:
    • No loss of subtle flavours from heat-sensitive ingredients
    • Higher gloss (with Celebration DF)

Celebration Icing sugars will ensure your final products are smoother, whiter and glossier than other products, with reduced grittiness and improved stability.

Celebration DF

Celebration DF (Dry Fondant) contains spray-dried glucose which, when mixed with water, makes an instant fondant.

Compared to other dry fondants Celebration DF produces smoother and whiter finished products. It is also more flexible and easier to use than traditional fondant.

Celebration CP

Celebration CP contains tri-calcium phosphate as a free-flow agent and is suitable for all processing conditions and temperatures, making it the ideal choice for a range of applications including ultra smooth toppings and creams.

Celebration FT

Celebration FreezeThaw icing’s optimum blend of sugar, spray-dried glucose and sorbitol, delivers all the benefits of Celebration Icing (no fuss, quick-mix) but with added freeze-thaw stability. Its will help you create perfect results across a range of applications, keeping icing glossy even after freezing.

Celebration TW

Celebration TopWrap is ideally suited for short shelf life bakery products that require contact wrappable icings eg.
  • Iced fingers
  • Belgium buns
  • Danish pastries, etc

Celebration TopWrap contains acacia gum as a gelling agent to provide control of moisture and stickiness, giving a wrappable icing which sets harder than usual. This means that it doesn’t stick to the wrapping film and it doesn’t come off the bun.

Celebration TopWrap provides the same functionality as other close-wrappable fondants - but with all the benefits of the Celebration range, plus a four day shelf life.

Celebration WS

Celebration WS uses wheat starch as a natural free-flow agent and is ideal in applications requiring minimal heating such as butter creams and many icings.
